These fudge squares are not only super simple to make, they’re so delicious I daren’t tell my family I’ve made them or else they’ll all be gone before they’ve quite set in the freezer!
These protein fudge squares are vegan, dairy-free and egg-free. And they’re so quick and easy to make, they require no cooking whatsoever.
Just a note about the peanut butter: be sure to use the more natural option, with no added sugar and minimal added oils.
So, without further ado, here’s the recipe:
Chocolate Peanut Butter Fudge Squares
Ingredients
- 3 tbsp coconut oil (extra virgin)
- 270 g peanut butter – crunchy or smooth (or 1 Cup)
- 5 tbsp maple syrup (pure, good quality)
- 2 tbsp cacao powder
Instructions
- Melt the coconut oil in a glass or pyrex bowl, either in a bain marie or in the microwave. Remove from the heat.
- Add the rest of the ingredients and stir until well combined.
- Pour the mixture into a small, freezer-proof container.
- Smooth down the top with the back of a spoon and place the container in the freezer for 15 minutes.
- Remove briefly to cut into 18-20 squares and then return to the freezer to continue setting for at least a further 45 minutes.
- When ready, serve and eat, being careful not to leave them out too long at room temperatur or else the squares will start to melt and become a little gooey.
- Keep uneaten squares (hah – who am I kidding?) in the freezer for up to 2 weeks.
